Apple Dumpling time

We inherited two apple trees when we bought our house, but one blew down in a storm a couple years ago. Luckily, the one that blew down was the one that wasn't very fruitful. The remaining tree is still being adequately pollinated, and had a huge load of apples again this year. We have no idea what kind of apples they are, but do know this: they are very early (ripening in August), very tart, and very poor keepers. The windfalls aren't worth picking up, and what are picked from the tree need to be used within a few days or they turn to mush. But, they make great pies. (Organic too, since we don't spray.)

Mom & Dad picked a bunch when they were here a couple of weeks ago, and Mom sent this report card:
- 11 half pints of apple butter
- 16 freezer boxes full
- 12 pints of applesauce
- 9 half pints of applesauce
- 8 pints of apple slices

Our report card: 2 batches of apple dumplings. (Mike used his new pie crust making skills to experiment on the dumpling dough, and was satisfied with this second batch.)
