Last weekend:
- Mike had to try Gooey Butter Cookies. Sammie brought some for Christmas, and Janie sent us that recipe plus one more. Mike made the second version of the recipe (for comparison purposes) and experimented with the cooking time and modes (our oven will do convection and convection/bake in addition to standard bake). We declared this experiment a success. (They're all gone now.)
- We bought the newest Jamie Oliver cookbook recently, and Mike made his onion soup, which uses red, white, and yellow onions, scallions, and leeks. This really is the best onion soup we've ever made. Still eating this for lunches this week.
Today:
- I got out the Cooking Light recipes and made a Lamb Ragu over pasta, and baked apples with cranberries & walnuts.
- Mike added a Jamie Oliver roasted carrots & beets dish for dinner tonight. He decided that he had finally found a way that he likes beets.
- For dessert, Mike also made a Raspberry Creme Cake (pictured) from his Christmas present cookbook. I guess we had to have something sweet to offset all those healthy vegetables.
We'll be eating good for the rest of the week.
