What's for dinner?


Sunday is when we do the major cooking for the week, and Mike said he was in the mood for soup. Unfortunately, he wanted chicken noodle, but we didn't have enough chicken stock, and not enough time to make more. We did have plenty of beef stock in the freezer, however. In fact, there were a bunch of partial packages of various frozen vegetables in the freezer. Add some staples from the pantry and refrigerator, and tonight's soup was vegetable beef barley (minus any beef other than the stock). It contains peas, corn, spinach, onions, tomatoes, celery, carrots, potatoes, edamame (i.e. soybeans), the barley, and for a little zip: hot sauce, Worcestershire, balsamic vinegar, garlic, and a few spices. And it was really good.

Add some cheese & crackers and a chocolate bar, and our meal is complete.

I love soups in the cold weather. And we are still having SNOW ... in March ... in Oregon!
